How to Make Instant Pot Vegetable & Tofu Pasta Soup
1. Sauté the Vegetables
Set the Instant Pot to Sauté Mode. Add olive oil, bay leaves, onions, carrots, celery, bell peppers, mushrooms, and a pinch of salt.
Sauté for 3–5 minutes until the onions soften and become translucent.
2. Add Herbs and Tomato Base
Add oregano, rosemary, basil, red pepper flakes, nutritional yeast, crushed tomatoes, and tomato paste. Stir well.
Pour in 3 cups of water or vegetable broth and mix to combine.
3. Pressure Cook the Soup Base
Close the lid and pressure cook on High for 8 minutes.
Allow the Instant Pot to naturally release pressure.
4. Add Pasta, Spinach, and Tofu
Open the lid and stir in the pasta, spinach, and sautéed crumbled tofu.
Pressure cook again on High for 2 minutes, then allow another natural pressure release.
5. Final Seasoning and Garnish
